After several years of research, the two winemakers Filippo Baccalaro and Teo Apolito found the best and oldest vineyards in the regions of Manduria and Sava. These two regions have specific climatic conditions for the cultivation of Primitivo, the emblematic grape of Puglia. The combination of iron-rich soil due to disintegration of limestone and the significant temperature changes between night and day let the grapes develop rich flavors and produce quality wines. Besides the Primitivo, the area is known to have several indigenous varieties whose two winemakers have the mission to make known.
